Zunyi is not only a famous historical and cultural city, but also Maotai town under the jurisdiction of the city has become a specialty area of Maotai liquor due to its special geographical location and special climate factors. As Maotai town is located in the river valley with low wind speed, it is very conducive to the habitat and reproduction of microorganisms brewing Maotai liquor. In the 1960s and 1970s, relevant national experts used Maotai technology and raw materials, pit mud, and even workers and technicians to produce in different places, and the products could not achieve the same results. The sorghum used in Maotai liquor production is waxy sorghum, commonly known as red tassel sorghum. The difference between this sorghum and sorghum in Northeast China and other regions is that the particles are solid, full and uniform, the particles are small, the skin is thick, the amylopectin content is more than 88%, and its cross section is in the shape of glass, which is very conducive to multiple rounds of roasting of Maotai liquor process, so that the nutritional consumption of Maotai liquor in each round has a reasonable range. The water used for brewing Maotai liquor is mainly the water of Chishui River. The water quality of Chishui River is good. The liquor brewed by distillation with this slightly sweet water without dissolved impurities is particularly sweet. Maotai town also has very special natural environment and climate conditions. It is located in the basin at the lowest point of Guizhou Plateau, with an altitude of only 440 meters. It is far away from the plateau air flow and dense clouds all day. The high temperature of 35-39 ℃ lasts for 5 months in summer, and is shrouded in muggy and humid rain and fog for most of the year. This special climate, water quality and soil conditions are very favorable for the fermentation and ripening of liquor. At the same time, they also play a decisive role in the microbial production, refinement and increase or decrease of aroma components in Maotai liquor.
